offences outside school

I want to know why the private school my daughter attends insists on discliplining children for things that happen at weekends. I feel they are taking away all my rights as a parent. We are in the UK.

I don't know that I can answer the "why." Certainly I would feel frustrated in your shoes.

Some possible things that you could do: Go and talk with the school instructors or administrators. Explain that you expect the school to handle the discipline for what takes place in the school--and to inform you of such occurrences, but that you will handle those things that happen outside of the school. Invite them to contact you if they think you are unaware of a particular event.
